Gracie turns 4! June 29, 2011

Our sweet little princess Grace turned 4 on Saturday.  Monica invited us all for her birthday party at Kiwanis Park to celebrate.  Aside from her always wanting to give us a weird pirate smile where she looked like she was saying aarrrrggghhh, we got some cute pics of her on her special day.

 

 

Lasagna for Father’s Day

Usually if I’m having Father’s Day I like to grill and eat outside if possible.  This year we couldn’t.  The weather was a little on the cool side and Papa gets cold so easily so I decided to make lasagna instead.  When Nana died, Janeen brought over a pan of lasagna and Papa loved it.  When he told her that she promised to make him another pan sometime and that’s all we’ve heard from Papa since.  So I used Janeen’s recipe and made lasagna, garlic breadsticks, rhubarb cake and berry trifle.  Everything turned out great (which usually doesn’t happen when I have company over!) and I think Papa enjoyed the evening.  I know the guys all enjoyed their presents!

 

Bookies review of The Last Lecture by Randy Pausch June 28, 2011

Our book club got together at the beautiful home of Susan O to review our June read The Last Lecture.  We had lots of wonderful food (Amy brought Buffalo Chicken Mac & Cheese) and a special guest (Laura’s mother who was here for a visit- and she even had her mom read the book so she could keep up with the discussion!)  After discussing the book (which I will post a review of early next month) we ordered book club t-shirts and compared e-readers.  I so enjoy my evenings with this wonderful group of ladies!

 

Mighty Eagles Backyard Campout

We had another super weekend for backyard camping at the Simmonds’  home.  The initial weather forecast earlier in the week had predicted rain all weekend but aside from a 10 minute mild shower Friday evening we stayed pretty dry.  The weekend started off with our traditional Friday night meal of beans and roasted wieners.  Then we set up the tents

before enjoying some s’mores for dessert

 

The next morning after a breakfast of omelets in a bag and some exercises

the boys went for an early morning swim

And by the time they got done they were ready for lunch!

One of Zach’s friends brought over a kitty for us all to cuddle with.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

We decided to go on a nature hike next

and the kitten followed along behind!

When we got back home we threw some Coca Cola chicken in the dutch oven and let it cook while the boys went swimming again

 

Then we sat around the fire and enjoyed each other’s company before finally going to bed.

It was a super weekend and we can’t wait until the next one in September!

 

Highlight Reel June 4th-10th, 2011

Saturday-  Zach helped Dad drop a tree and then we went to town to get groceries.  The rest of the day was spent picking weeds, mowing, starting to wash the house and fishing.

Sunday-  perfect day!  (see previous post)

Monday- Hot!  Wasn’t ready for this heat.  All I could do after I came home from work was sit in front of the fan…until I got up to check to see what I had in the fridge for supper.  Upon noticing I had two 5 lb chubs of hamburger that had to be used or froze, I decided to get it cooked up for later in the week.  I made two pounds into hamburger patties, used 2 pounds for cabin casserole for supper, used two pounds for swedish meatballs that I can stick in the crockpot later, and just scrambled and browned the other 4 pounds and stuck those in the freezer.  Then while my supper was baking I baked up chicken breasts and shredded them for chicken enchiladas next week.  I felt really on top of things but I don’t know why I had to wait until the hottest day of the year to decide to bake and cook for 2 1/2 hours!

Tuesday-  Hotter still!  Today it got to 96 degrees and the humidity started.  Mom had her doctor’s appointment to find out what could be done about her loose screw (actually it’s broken, but it’s funnier to say the other way!) and found out they don’t have to do surgery unless it starts to bother her.  That’s great news!  I didn’t want to see her have to go through surgery again.  Jeff, Zach and I sat out on the patio for a couple of hours toight since it was much cooler than the house.  We are still waiting to hear from my nephew Bryan to see if him & Tony have had their baby yet.  As of now, they have been in the hospital for 12 hours!

Wednesday-  Much cooler today.  Almost chilly but I can handle that.  Zach worked his butt off today cleaning and getting ready for the backyeard campout this weekend.  His help was much appreciated!

Thursday-  Monica & Gracie came to visit us tonight.  They stayed for supper and even went out 4 wheeling for a while.  Then Gracie wanted to watch Dora, of course!

Friday-  Everyone’s coming over for the campout this weekend and we are finally ready.  Zach has the itinerary all planned out.  Should be loads of fun!

 

Thank God for Slices of Heaven on Earth June 5, 2011

Today couldn’t have been a more perfect day!  For the last month it’s been weekend after weekend of rain but this weekend was nothing like the last ones.  Saturday was gorgeous but we were a little too busy to notice…but today!  Ahhhhh!  After church we came home so I could cook up breakfast burritos.  Then the rest of the day was a study in relaxation.  Zach went over to visit my dad and when he came back him and I finished washing the front of the house.  The water kept us cool and it was much easier to scrub then I thought it would be.  After a quick trip to town to retrieve Jeff’s cell phone that he left at home, Zach packed to spend the night out of town with a friend and I took a book to the patio.  I didn’t even crack it open!  I laid on the chaise and fell asleep in the wondrous sun.  Luckily I woke up before I was more than pink.  Jeff and I enjoyed grilled kabobs and baked potatoes on the patio and when Janeen stopped by we took the boat out for a three hour boat ride.  The day was warm but not hot.  The sun was out all day (no rain!), it was not humid or windy.  It was just an all around perfect day.  Knowing in Minnesota we don’t get many of them we know how to enjoy them when they come!

 

Highlight Reel May 28th-June 3rd, 2011

Saturday-  Zach and I spent the entire morning working up the flower beds.  One of my goals on Project 52 was to have the flower beds worked before June 1st.  I can check this one off my list!

Sunday-  Normally on Memorial Day we go fishing and end the evening with a fish fry.  Looking ahead at the weather forecast we saw that Monday had a 60% chance of thunderstorms.  Not good to be fishing with a graphite rod in a thunderstorm.  So we broke tradition and went today instead.  We started out at the South Long Lake Dam but didn’t get anything there.  Then we moved on to the landing area.  Even though we brought the boat we fished off shore and had a blast pulling in sunnies left and right.  We finished off the evening, not with a fish fry (we’ll save that for tomorrow) but a wienie roast at Mom & Dad’s.  I cooked up a hotdish, she provided hot dogs & bean dip, I had a jello parfait and she had stuff for smores.  We sat around the fire until 9:30.  It was great!

Monday-  No Scouts for the first Monday in forever.  I don’t know what to do with myself!

Tuesday- Had Dad over for Spaghetti tonight.  Could have sworn I had garlic toast in the freezer but when I went to put it in the oven it wan’t there.  Spaghetti just isn’t the same without garlic toast.

Wednesday-  Janeen and I took a short walk today.  The weather was great.

Thursday-  Zach’s last day of school today.  He will go back to school in the fall as a Junior!  Having only a half day of school and it being Jeff’s day off they celebrated by spending the afternoon fishing.

Friday-  End of the work week and the weather for this weekend looks promising.  I can’t wait!
